Grilled Sausage with Peppers and Onions

Ciao my Friends,
This is a perfect summertime dish that can be used to entertain your friends and family. It can be used for a backyard party or a more formal lunch. It is quick and easy to make and therefore will give you more time to spend with your guests.

Cut the bell peppers in half and take out the center with all the seeds. Cut up the bell peppers and onions in quarter inch slices, not too small. Heat the olive oil in a large frying pan, and add the peppers and onions and sauté until slightly soft. Salt and pepper to taste.

You can set the peppers and onions aside while you grill the sausage, but if you have a gas Grill with a side burner you can grill the sausage while you sauté the peppers and onions.

Pre-heat your grill to medium heat. Grill sausage for about 15 to 20 minutes, or until the internal temperature is 150 degrees. Turn occasionally. When sausage is done serve on a large plate and cover with the peppers and onions.

You can then make sandwiches with the Italian bread or serve as an entrée. Great with a side of green salad and Italian dressing. Before making sandwiches, slice the Italian bread and grill until slightly toasted. Rub the garlic cloves on the crust and drizzle a little virgin olive oil to taste.

Makes six to eight servings.
